Chilgoza (Pine Nuts): The Himalayan Nut Most People Have Never Heard Of

3 September 2026

Ask most people about pine nuts and they'll picture the small, pale, mild ones used in pesto — usually imported, usually from Mediterranean stone pine. Few have tried Chilgoza, the pine nut native to the dry temperate forests of the western Himalayas, including parts of Kashmir and Kinnaur — a genuinely different nut, in a market almost nobody has properly explained.

Why it's so hard to find at a fair price

Chilgoza comes from the Pinus gerardiana tree, which grows wild rather than in cultivated orchards, and takes roughly two years for a single cone to mature on the tree — nearly double the cycle of most commercially farmed nuts. Cones are hand-harvested from wild, often steep and remote forest terrain, then dried and hand-cracked to extract the kernel, with no mechanised shortcut at any stage. Low wild yield plus entirely manual harvest and processing is why genuine Chilgoza is priced closer to saffron than to almonds, and why a lot of what's sold cheaply as "pine nuts" in Indian markets is actually a different, milder imported variety altogether.

What makes it worth trying

Chilgoza has a distinctly richer, more resinous, almost buttery flavour compared to Mediterranean pine nuts — a difference people notice immediately the first time they try a genuine batch side by side with the imported version. Nutritionally, it's dense in healthy unsaturated fats and one of the better plant sources of lutein and zeaxanthin, two compounds specifically studied for their role in eye health, alongside a solid protein and iron content for a tree nut.

How to actually eat it

Chilgoza is traditionally eaten roasted lightly and salted, on its own as a snack, rather than cooked into dishes the way Mediterranean pine nuts are used in pesto — the flavour is strong enough to stand alone, and roasting brings out its natural oils further.

If you haven't tried real Chilgoza before, it's genuinely one of the more distinctive things in our range: Pine Nuts (Chilgoza).
